What's it look like on the plate. Bear in mind we have posters up in here that are like pitmasters, but at the end of the day, what's on the plate?

Didn't take any pictures when I was done, admonish me, my phone decides when it wants to charge, but after I hit them with the glaze they had a gorgeous mahogany color. Not falling off the bone, just tender enough to pull cleanly from the bone, great smoke flavor. I wouldn't call myself a pitmaster, but I've been smoking meat for over 20 years. That grill is older than me btw and I wasn't about to fire up the smoker for two inner loins and a slab of ribs. That being said, I have that thing dialed.

I usually bleed my wild game, sometimes up to two weeks, but there is just something awesome about watching an animal go from a piglet to 175lbs, then your cousin shoots it, your dog trails it, and you eat it, on freaking Independence Day.. I guess that's my inner caveman showing. The rest will become smoked jalapeno cheddar sausage.

We did the 4th on the 3rd at home and grilled up some fat shrimp and burgers and whatnot with all the kids over and then a 5 min drive down the road to watch the fireworks.

I watched Top Gun: Maverick and thoroughly enjoyed.
