I want to tell yall about a trip I took to AUSTIN TEXAS

i HAVE ALWAYS SAID THAT BRISKET WASNT BBQ.. and although I love a good smoked brisket,, BBQ is chopped pork butt or shoulder to me (or whole hog I guess). Texas people skip to the end, you're not going to believe what I say, I dont,, then come back and read the rest..

Now, my son (23) and I love BBQ, Smoking Meats for ball games or just because the sun came up.. We found ourselves with a few days off together over july 4th and no real plans. He had been you tubing and was intrigued by Aaron Franklins videos.. and he asked if we could fly to Austin and go to Franklins..

I'm like "Hell yeah" its on.. we didnt have much time:

We flew into Austin on July 3rd and landed about 3pm.. Checked into the Fairmont hotel in downtown Austin. Very Nice..

Now we knew about the line at Franklins and having to get there early and they sell till they are sold out everyday (around 2 ~3pm). Our plan was to get there by 8am but we needed some chairs and a cooler.. a quick trip to walmart and we bought some plastic lawn chairs and a styrofoam cooler, then filled that with beers and a couple of waters.. it is July in Texas remember..

we wanted to drive past Franklins to make sure we knew where it was,, just a couple of blocks from the Hotel.. Noticed a hell of a lot of food trucks,, mostly Taco's, Quite a few Mexicans around Austin..

Then we decided to drive to the Texas stadium and check it out.. on the way, we drove past Stubbs bbq,, both of us said that was going to be dinner that night.. We've been using Stubbs sauce for a while.. love it.. More on Stubbs later..

We drove around Daryl K. Royal Texas memorial stadium and really enjoyed the sights.. we were checking out all the people using the River,, that was cool,, Kayak's, canoes, just about everything.. lots of people,, came back after dinner to see the bats come out from Congress ave bridge..

Stubbs; I'm not sure if this is a music place or a resturant.. its both actually.. we got a bbq sampler of brisket, Ribs, Sausage, and Pulled pork,, with sides of onion rings and a creamed spinach that was really good.. The Brisket was great, better than I've ever had before.. the Sausage was really good too.. Ribs and pork were good but on par with whats available to me here.. I hoped this didnt mess me up for Franklins..

Franklins on July 4th: we got up and got ready, no breakfast.. got to Franklins about 7:30am.. already about 30 people in line.. we got our spot, kinda under the smoke room.. we would be in the shade all day.. the atomosphere could be best described as a tailgate.. people were meeting each other in line and drinking and playing cornhole and just having a blast.. the group ahead of us was from Illinois, that guy was a big smoker and also wanted to see what the fuss was about,, The group behind me were from there in Austin and the guys wife and mother in law were mexican. they started their morning with mimosas and offered us some. they were really cool.. when they found out that we made this trip just for the BBQ, they thought that was crazy but cool.. I asked them where the best mexican food could be found and they told me about a place called Matts El Rancho.. thats where we ate dinner..
They opened the doors at 11am and the line started moving.. before that though, they had someone walking the line outside asking people what they were going to order so they could tell when they were going to sell out and let the people know not to wait.. I thought that was great..
Franklins sells their meat by the pound or half pound or quarter pound.. Once we got inside, they had a girl bringing samples and handing them out.. these were smoked hot dogs cut in half,, they were fantastic..
We ordered a pound of brisket, a pound of sausage, a half pound of Ribs, a quarter pound of Turkey, and a quarter pound of pulled pork (I wasnt going to get pork but the guy in the line really suggested that we at least try it) (I'm glad he did).. No sides,, they put several sliced of white bread on the plate.. The resturant is not big but they slice the meats to order so the line doesnt move fast.. and the timing is perfect because about the time you get your food, a spot at a table opens up..
we sat down and started eating and buddy let me tell you something.. that was the best BBQ Ive ever had in my life and it aint even close. I've had a lot of BBQ and Franklins beat them all.. I figured the brisket and the sausage would be great,, but didnt really expect the Ribs and pulled pork to be so much better than all the other I've had.. The Turkey was really good but not earth shaking like the rest.. Of course we didnt eat all of that and took some back to the hotel.. and took a nap lol.. Sauce was available and we tried them but didnt need them.. the meats were that good..

Woke up and piddled around a bit,, still full as hell.. but we went down there to eat so we went to Matts El Rancho and the damn salsa nearly burned my lips off.. No sugared up tomatos here.. they made their own tortilla's there and I got enchilladas with rice and beans... again, Fantastic..

Austin is very flat,, and their main interstate is busy as hell.. but its a great place and I'm really glad we went.. both me and my son noticed how good looking most of the people were.. just the population as a whole are really Fit, Clean, ad good looking people.. I asked my son, where's all the fat people at.. he said I dont know..

We should have gone to lockhart but really couldnt fit anything more in our stomachs.. maybe next time..

Next trip is going to be Kansas City,, that will complete my BBQ Grand Slam.. already been to Memphis, Carolina's, and Texas..

I still dont think Brisket is BBQ, but will admit that when done right, Its something better.. If you get the chance, go do this.. Franklins is worth it, and Texas is a pretty bad ass place !

Meh brisket ain't BBQ. The only thing I found worth having in TX was the chicken fried steak.
 
I thought I smelled something even worse than normal emanating from the north....
