Last warning,, if you love to eat fried white fish on a buffet .. look away,,, what i'm about to say will ruin it for you.. im gonna double space a few times so you can close the thread.. seriously,







I'm not a fan of Salmon,, it taste too stong or fishy for me.. but I love a great fresh white flaky fish, like snapper or grouper.. flounder will do and mahi mahi is not too fishy.. Fried, Blackened, grilled, or pan seared in olive oil is all fantastic.. I love it..
that said,, I learned something a few years ago that changed things for me.
there is a fish called Swai,, also called pangasius.. and a few other names.. it can be bought for $3 a pound instead of $20 a pound for the fish I mentioned above.. Swai is gross,, it is grown in ponds in Vietnam and fed Pig shit.. way over populated for the space in the ponds..
Did you know that seafood is the most misrepresented food in the world. meaning when you order a piece of snapper you have about a 20% chance of getting snapper on your plate.. It has gotten so bad that the fda made a law that country of origin had to be available for any fish sold in the US..

I was at a resturant (shuckums) on the beach today for lunch.. several fish items on the menus said "white fish"... I asked what the white fish was and they said Pangasious... I cant even get good fish at the beach anymore.. and this pisses me off..

 
Have the oils spills significantly impacted those numbers from years past after watching the video?

Pangasius sounds not like a chick’s name but a condition to me, just like my buddy who thought Moby Dick was about a venereal disease.

Anyway, my first summer job after HS was on a salmon processing barge in Alaska and I suffered swallowing enough raw shit in 3 months to ever order it on a menu. Salmon free to this day, OP is right on!
 
Another reason to grow local / buy local.

But I do disagree with OP about one thing...
Fresh caught Chinook salmon, from the Salmon river after a 700 mile journey upstream from the Pacific, smoked on a cedar plank with a little butter, garlic and thyme.... There's not much better in life than that right there.
 
Salmon is delicious, but it's easy to overcook. For that reason, I tell everyone who wants to cook it for me that I dont like it. Most people fuck it up and of course, pretend that they didn't and get weird if you tell them how to do it.

As @Nod4Eight said, cook on a cedar plank.
