Local Sauces

What's something local that has changed the way you eat? I'm from Crawfordville Florida and the town ten minutes away, a man has started making his own sauce. It's an all purpose sauce that can be put an anything. Amazing on oysters and great on everything.

I make my own stuff man. Usually an aoli or a Greek dressing. Usually grill a porterhouse bring it in rare and finish in burgundy wine and mushrooms in a cast iron pan until medium rare. Voila!
 
went to a jazz fest
on algiers island
maybe 20 yrs ago -

they had some food booths
under 10ft canopies -
one booth had crab cakes roumalade -
a crab cake on a piece a lettuce,
with this fantastic roumalade sauce -

i still look back
and consider this sauce
at the top level -

i always compare any
to that experience -

Compare/contrast with say Frank's and Franks wing sauce?
 
Never understood the hot sauce debates which is huge in Louisiana. I think different sauces lend to different dishes. Tabasco is a Louisiana-based worldwide brand but totally gets clowned in Louisiana... true story. I appreciate a good sauce though whether it’s hot, BBQ, or any other type of sauce.

This place is about 20 minutes from my house.

Both the white and red sauce are very tasty imo. The white is more for chicken while the red is a nice sweet bbq sauce.
