Gator is actually an odd flavor. The meat has it's own structure, somewhere between pork and chicken. Dog, on the other hand, is very similar to beef. It's a deep red meat with a very distinct flavor.

Had some gator bites at a restaurant down in FL last fall and they were really good. Never had dog and I plan to keep it that way lol
