Two different cultures altogether. Cajuns are from Acadia (now Nova Scotia) who were exiled in Le Grande Derangement “The Great Upheaval” when France sold lands to England. They sailed along the Atlantic coast being constantly rejected until finding their homes in the swamps and prairies of Louisiana. Creoles are of mixed African and European (mostly French but sometimes Spanish descent) and were free “people of color” before the Civil War. I know some Creoles and they have old money. Having said all that, both cultures can fucking cook!!

I really know I need to try the Cajun andCreole food more. I was once telling someone from the bayou that the secret to my meatballs was the spices and of course, they asked what I used. I said I’m not really sure, Cajun, creole, either one works, same thing.

You don’t want to be the guy that says Cajun and Creole are the same thing. Anyhow, Zatarains is what I add to the meatballs.

I’ll simplify it. Zatarains is Creole. Creole is mostly (but not exclusively) in New Orleans. The big difference is the use of tomatoes. Creoles tend to put tomatoes in their Gumbos and Jambalayas whereas Cajuns tend to not use tomatoes. Go lurk the food and drink board at tigerdroppings.. it’s serious shit in Louisiana LOL

Thanks, I’ll check that out. I’ve always used tomatoes so I guess so far I’ve been dabbling in Creole.

In my experience, Generalizations refer to groups of people as a whole, for example: You can know a good Southern Guy, but put him in a room with 10 other good southern guys and you get a bunch of Rednecks. Not always true.
