Not squirrel, but still pretty good. 2lb eye of round roast, 18 hour sous vide at 130F then finished on pellet grill 2minute/side at 400F, pretty close to filet for $11

Had an old butcher tell me once that eye of round was the best piece of beef you can eat. He shared a piece right from the butchers table raw. Delicious.

WELL! I'm your fuckin huckleberry lol...
Jess' BBQ was started sometime in the 80's as a brick n mortar on the poor side of town next to a housing project. his pork sandwiches and ribs were good enough I guess but his claim to fame was the scramble burger,
most of his customers were poor and he needed to sell something cheap and filling, so he got 5 lbs of fatty hamburger meat and cooked it down on the stove in a big pot.. did not drain the fat,, just let it simmer all day, the scramble burger is like a sloppy Joe, in Iowa, they have something called a loose meat sandwich which is similar,,
Jess would put bbq sauce (spicy) on the bun and he would dip one serving spoon into the meat pot and squeeze the grease out o the side of the pot then put that on the bun, he had something he called Krout which is just cabbage and carrots blended in a blender, a small spoon of that went on top the meat and he would wrap it up.. and sell it for a dollar.. you pretty much have to eat it from the wrapper as you unwrap it or you'll lose most of it and the grease will drip all over your shirt,, I can eat about 4 of them without coming up for air..
Did I tell you they are fucking great!
 
oh yeah, sometime in the early 00's, some kid came in to rob the place and he shot the old man, Jess.. soon after the place closed down and has long since been bulldozed to the ground,, some years later, his nephew opened up a food truck and started selling what he claims is the original recipe Scramble burgers,, and they are close,, He finally bought a lot of Hwy 21 between Jacksonville and Weaver and he's been there for a couple of years now.. @RTR...USN (ret) you should try this.. you need at least 2 to make a meal.
