I'm a realist that understands the tenderizing qualities that vinegar offers. But if you make me chose a favorite team in the Carolinas, I'd have to go with AppSt. BTW, what do you use as a marinate?
I was just screwing with you, but I'm not a huge fan of vinegar based bbq. I hardly ever marinate spare or baby back ribs, but when I do I generally use something vinegar and sugar based. I also wrap them sometimes because both can help get your desired tenderness quicker if you're in a hurry.

I love to build a fire, pull the membrane, season, add some wood, stick them in the smoke, shoot the shit, put some urkel in the air, and put a few down.

Sometimes we show how spoiled we are and grab a fold out table, an extension cord, and a custom cardbord box as a sun shield to watch college football on a smart tv. I'm such a dick I throw the trimmings over the hot side for snacks.
