Are you a damn closet Gamecock or Tarheel? Slim might be proud.Ribs have been on close to 2 hours now. Marinated in a vinegar base for about 2 hours prior. About an hour and a half left give or take. Low and slow.

I was just screwing with you, but I'm not a huge fan of vinegar based bbq. I hardly ever marinate spare or baby back ribs, but when I do I generally use something vinegar and sugar based. I also wrap them sometimes because both can help get your desired tenderness quicker if you're in a hurry.I'm a realist that understands the tenderizing qualities that vinegar offers. But if you make me chose a favorite team in the Carolinas, I'd have to go with AppSt. BTW, what do you use as a marinate?
