If by everyone else's standards than it's Mexican food BUT I say that with a bit of hesitation as Mexican food is so damned normal to me and our traditional foods all through the SE tribal nations is so identical to food in Mexico, Guatamala etc.

I remember that!There was a "Taco truck" about 2 miles from Nod's place. Folks barely spoke English. It was really good. There was a pretty big line like you say, but those little busy places like that are always the best.

When I was still living in Baton Rouge, there was a hole in the wall Mexican place that was pretty much off anyone's radar. Every time I drove by, I noticed that the customers were always Mexican construction workers. I finally stopped in and started going weekly at least. It was unlike any Mexican food I've had anywhere else. They used very little cheese and it was spicy as hell.Mexican. You can throw a rock in any direction around here and hit a Mexican food place. A couple great sit down places, but the best “to go” place is inside a Shell gas station. The gal working the register speaks enough English to take your order but that’s about it. Always a line with Mexicans and white guys wearing construction/road crew clothes.
