gimme a good recipe for Smoked Turkey

Put some seasoned salt and lemon juice on it, smoke for 4-6 hours, when it's done either feed it to the dog or throw it away and put one of these on the grill.

Smoked whole chicken and turkey are probably the two most difficult things to correctly smoke. By correctly, I mean juicy meat and a crispy skin.

I brine mine overnight, dry and season inside, out, and under the skin, cold smoke for a few hours, then deep fry.

Without a fryer you can come damn close finishing it in the oven without a fryer, but elevate the bird so it doesn't sit in the rendered liquid.
 
I smoked the turkey last year and it turned out better than any baked or fried turkey Ive ever had. All I did was brine it overnight and smoke it at about 225 for five or six hours. The white meat was delicious, but holy shit, the dark meat was amazing. I didn’t know turkey could be so flavorful.

Thanksgiving and Christmas Eve gatherings at the RazzlDazzl house have always included smoked pork shoulder, turkey like I described above, fried shrimp, the best Apalachicola oysters you can find, and all the fixins. Never steak, but I'm not opposed to change.
