Never tried tripa. It sounds kinda gross, maybe if there were no other options. Cabeza is usually really good, the meat from the cheeks is very tender. I’ve had good and bad lengua, but I rarely order tongue. I love all kinds of tacos, a couple of my less common favorites are birria (goat) and cochinita pibil (suckling pig).What kind of tacos y'all like? The Maxi place in town makes pretty dang good tacos (and other Mexican foods that consist of meat and other ingredients wrapped in a tortilla.)
My favorites are lingua and carne. But I also enjoy the cabesa and tripa. Both green sauces and a bit of red are a must. How about y'all (taco bell and Jack in the box don't count.)

^^^Not exactly true. Chitterlings are hog intestines.

The best I have had was blackened grouper tacos in Chucktown.I was ready to whip my son's ass for even suggesting blasphemous fish tacos. I wish I could remember the place in Seattle, it was near the fish market, but dayum my country ass had been missing out on life by thinking fish had no business in a tortilla shell. If you set one of them on the top of your head, your tongue would slap your brains out trying to get to it.

I understand.I am the type that shies away from trying different things IF there is something I know I will like available. I've had and like chittlins and mountain oysters so its not that I hate strange things but more that I don't want to risk getting something if I'm not sure that I will like it.
