Whats for dinner?

The wife went to the hospital with her youngest sister. Their stepdad was admitted from his assisted living facility a few days ago....he isn't doing well.

So, I was left to my devices....put some leftover roasted potatoes in a bowl, threw in some corn, shredded sharp cheddar and topped it with some chicken gravy. Homemade KFC bowl minus the meat....

And beer, cannot forget the beer.

Those are center cut pork chops seasoned with salt, pepper, and bad byrons butt rub, then smoked at 250 on my pellet grill for about an hour, sauced each side with Stubbs spicy BBQ Sauce.. and yes, I'm passionate about this kinda shit 😁
I do love some fresh asparagus, I do mine with olive oil, salt n pepper and baked at 400 for 20 mins.. might try some parmesan, sounds good.
the corn is fresh sweet corn from a field near my house that the local high school ag dept maintains. its a treat when you get some of that corn.
 
We grew up on cornbread, butterbeans, and fried taters. Maybe once or twice a week we would get a porkchop or chicken. I tell people that I was in boot camp when I found out that butterbeans weren't meat. And I love those meals more and more in my old age.
As you've probably surmised, I grew up on the farm and we always had meat because we raised it. So for me a meal without it is foreign. Once in awhile for breakfast, I will just eat a bowl of cereal, But if that's all I have I'm starved by 10 in the morning.

We grew a lot of what we ate and had a few chickens, pigs and occasionally some beef but that was for milking and selling. I have scalded and scraped many hog but we never butchered any beef.
