Exactly. Proper BBQ is brought to the table ready to eat, without anything added. I realize some other states just smoke the meat and pour on sauce before serving. That just overwhelms the meat. We flavor the meat as it cooks, and with vinegar sauces, the meat is also tenderized. You receive a superior amalgamated flavor. Dry rub brisket is excellent and similar, but still lacking by comparison.Good Q doesn't need sauce to cover it up.
