Good Q doesn't need sauce to cover it up.
Exactly. Proper BBQ is brought to the table ready to eat, without anything added. I realize some other states just smoke the meat and pour on sauce before serving. That just overwhelms the meat. We flavor the meat as it cooks, and with vinegar sauces, the meat is also tenderized. You receive a superior amalgamated flavor. Dry rub brisket is excellent and similar, but still lacking by comparison.
 
I didn’t try dreamland when I was in Birmingham. But this is the best barbecue sauce I’ve ever had. We still have it shipped up here now. View attachment 15862
That's a grilling/baking sauce. The sugar in that wouldn't last the many hours of cooking required. You dip that or put it on the meat just before taking off the heat. Not saying it tastes bad, it's just not traditional BBQ.

And I've had Dreamland ribs. They weren't anything special, but still good.

I leave the barbecue up to my wife but you all know she’s from the South. I have traveled a lot. And out of all the barbecue I’ve had. Nothing comes close to the barbecue in the south in my opinion.

I really had no clue what I was missing until I had real southern food either though.

See its Tuscaloosa or nothing. The Dreamland in Mobile sucks. The one in T-town - though a dilapidated dive- is divine.

Reminds me of a little BBQ dive back in my hometown of Greenville, SC, called Little Pigs BBQ, That had the best vinegar based que I ever had in my life. It barely had any room for seating, and they used old school desks because of the small space. Was always funny to go in there to order, and see all these adults in shirts/ties crammed into those tiny desks stuffing their faces with the best BBQ in town.
